Innovation Abounds at Heaven Hill Springs

As the Heaven Hill Springs Distillery Project Team continues to press on in the impressive and expansive implementation of Heaven Hill’s return to distilling in Bardstown, KY, we are amazed at the incredible progress taking place. Since you last received an update in August, so much has changed!

Take a look:

Placement of major equipment continues, especially in the Dry House.
Yeast Cookers are in place and two of the four Mash Cookers are complete.
The building is close to being dried in.

Most importantly, the project remains on schedule for startup in late 2024.

When we think about the new distillery, one word especially stands out: Innovation. It is woven into the very fabric of Springs and has been intentionally from the beginning. We asked Distillery Manager Adam Ganoe to describe some of the incredible innovations taking place throughout the project. Here are his elite selections, among many others!

  • Native oak tree forest and naturalized habitats for pollinators
  • Sitewide use of local wild grasses aimed at limiting the need for mowing
  • In-house yeast propagation for enhanced quality
  • Wastewater pretreatment via anaerobic digester which allows us to send cleaner water back to the city and generate biofuel for combined heat and power
  • Partnerships with local universities for distillery training programs which build relationships with our local community and provide additional opportunities for innovation
  • Calendar-automated chiller-to-tower water changeover in the cooler months for improved energy efficiency
  • Designed to operate with a 22-gallon beer as opposed to our typical 26-gallon beer – Could save us as much as 24,000 gallons of water per day!
